▋Introduction

#曼食慢语 #中秋# 节,每年我都要自己动手做月饼,今年有好多人说想看我做一个特别红、大家都特别喜欢、还特别难买的奶黄流心月饼。自己做过后更能体会到为什么大家都这么爱它了。月饼切开之后,那迷人的“流心”,奶香浓郁的奶黄馅,再配上薄薄香香的月饼皮,太诱人了!

▋Ingredients

Running egg yolk filling of mooncake:
3 salted egg yolk(45g)
10g milk powder
50g cream
20g fine sugar
a slice of cheese

流心:
咸蛋黄3个(45g)
奶粉10g
奶油50g
细砂糖20g
芝士片1片

Custard of mooncake:
3 eggs
150g cream
1/2 tsp vanilla extract
30g milk powder
50g fine sugar
30g butter
2 salted egg yolk
50g cake flour
a slice of cheese

奶黄:
鸡蛋3个
奶油150g
香草精1/2小勺
奶粉30g
细砂糖50g
黄油30g
咸蛋黄2个
低筋面粉50g
芝士1片

Pastry of mooncake:
36g honey
36g condensed milk
36g butter
100g cake flour
20g corn starch

外皮:
蜂蜜36g
炼乳36g
黄油36g
低筋面粉100g
玉米淀粉20g

  2. 感谢分享。 我用all purpose flour加corn starch调了cake flour,因为实在没买到。结果炒奶黄馅儿那里就不对劲了,炒不出视频中的样子,感觉那一团很粉很散而且油分离得很明显。明天做饼皮。。。感觉可能Amanda教的东西很多都太高端了,所以我做起来失败率挺高的。另外一个教做很多面食的博主,我做她教的食物总是一次就十分成功。成功率是个很重要的动力呀。希望以后Amanda能多讲解一下怎么避开失败点。

  3. 1.月饼需要分两天做,饼皮提前做了基本是包不了的
    2.放蜂蜜味道很奇怪,尤其是冷了之后,感觉是转化糖浆无法代替的
